Sirloin steak

Delicious and tender sirloin steak, served with barbecue vegetables, garlic butter and potato wedges.

The secret of cooking a delicious steak is to choose the right meat. Good sirloin steak should be matured for at least 21 days (ask your butcher). The meat should be a dark, deep red with a small amount of fat on the edges and marbling – little amounts of fat running through the meat.
Cook the meat on a griddle pan, let it rest for 3 – 4 minutes after frying. Don’t cook more than two steaks at once, as they will stew rather than fry. Serve with barbecue vegetables, a knob of garlic butter and potato wedges or chips. Enjoy!

Season with salt and peeper at the end of frying otherwise the meat will be chewy.

Sirloin steak


  • 2 sirloin steaks
  • 1 tbsp olive oil for frying
  • sea salt and freshly ground pepper
  • knob of garlic butter
  • Vegetables
  • 150 g fine beans, boiled
  • 1 medium courgette, halved and sliced into 1cm thick pieces
  • 1 romano pepper, halved lengthwise and sliced
  • 2 tbsp barbecue sauce
  • 1 tbsp olive oil for frying
  • sea salt


  • Heat the oil in a large frying pan.
  • Add the courgettes, and pepper, stir fry for 3 - 4 minutes until softened.
  • Add the beans, season with salt and pepper, add the barbecue sauce and mix well.
  • Fry for 2 more minutes.
  • Steak
  • Remove the steaks from the fridge and let it rest at room temperature for about 20 minutes.
  • Preheat a large griddle pan, brush the steaks with a bit of olive oil.
  • Fry the steak to your liking:
  • blue: 1 minute each side
  • rare: 1 minutes 30 seconds each side
  • medium rare: 2 minutes each side
  • medium: 2 minutes 30 seconds up to 3 minutes each side
  • medium-well done: 3 minutes 30 second each side
  • Season the steaks with sea salt and black pepper at the very end of frying.
  • Let the steaks rest for at least 3 minutes after frying.
  • Serve with a knob of garlic butter, chunky potato chips, and vegetables.
